It is still summer, but you can already feel fall coming. The days get shorter, the wind changes, nature slowly starts to change its colors and I am craving cozy knitwear, tights, apples and cinnamon.
Apple Cinnamon Muffins:
2 cups spelt flour
1 cup brown sugar
3 tsp baking powder
1 1/2 tsp ground cinnamon (or more if you like)
1/2 tsp baking soda
1/2 tsp salt
1 cup yogurt or sour cream
1/4 cup butter, melted
1 1/2 cups chopped, peeled apples
1/4 cup brown sugar
3 TS spelt flour
1/2 TS ground cinnamon
2 TS cold butter
Preheat oven to 200°C.
Combine dry ingridients.In another bowl, beat eggs, yogurt and butter.
Stir in dry ingridients until you have a smooth batter. Fold in apples.
Line muffin tin with pretty paper cups and fill to the top.
For the topping combine, sugar, flour and cinnamon. Cut in butter and mix until you have crumbs.
Sprinkle some over each muffin.
Bake for 25 minutes. Cool a few minutes before you remove them.
Allow to cool on wire racks before eating.
