First Advent and the smell of christmas

Today was time to lit the first candle and eat the first christmas cookies.
I made some delicious "Spekulatius", which is something like gingerbread, and I want to share the recipe and some pictures.


Spekulatius

100g ground almonds
250g (spelt) flour
150g (brown) sugar
1 tsp cinnamon
1/2 tsp ground ginger, cloves and cardamom
a splash of lemon juice
125g butter
1 egg

Mix the almonds, flour, sugar, spices, lemon, butter and egg together with a kitchen aid, or just work it with your hands, until you get a soft batter.
Make a ball and put it in the fridge for at least an hour.
Line two baking sheets with waxed paper, roll out the dough between to sheets of waxed paper and cut out shapes with christmas cookie cutters.


Put the cut out cookies in the fridge (or outside, if it`s cold enough) for like 15 minutes, preheat the oven to 180°C/ 375°F , spread them with a little milk and bake for 10-12 minutes.


Let cool on a rack.


 I made them yesterday, and they`re already almost gone...that`s how delicious they are...


Enjoy the cookies with some tea.
I`m very lucky to have a special holiday mug, of course with polka dots.

    you are such a wonderfully baker and your photos are so pretty always!
    i wish i baked more often! can you believe that i haven't baked cookies in probably 2 or more years!!!? wow..i must get on that soon ;)!
