The Weekend Cake

A weekend isn`t perfect without a good cake to acompany a cup of coffee or tea, right?
So, this is a delightful weekend cake.
It`s easy, simple, tasty, fluffy and just delicious!
Everything a good cake should be, plus the ingridients are things everyone should have around.


I enjoyed mine this afternoon with a cup of green tea and half an orange!


You need:

100g butter
200g sugar
2 eggs
1 tsp vanilla
100g ground almonds (or hazelnuts or coconuts)
1 tbsp lemon (or orange) zest
200g (spelt) flour
4 tsp baking powder
1/2 a cup milk


Preheat oven to 180°C/ 375°F.
Beat the butter and sugar until light and fluffy, add eggs, vanilla and lemon zest.
Stir stir stir.
Add flour, bakingpowder and almonds and mix until you have a light and smooth batter.


Grease your (bundt) cakepan with some butter and fill in the batter.
Bake for 45 minutes or until stick comes out clean!
Let cool and take out of the pan, on to a nice plate.


Done!
You made yourself a delicious weekend-treat!
