are these amazing Apple Pie Bars!
2 1/2 cups (spelt) flour
2 tsp baking powder
3 tsp cinnamon
1 stick butter (125g), softened
2 cups brown sugar
1 tsp vanilla
2 apples, cored, peeled and diced.
Preheat oven to 180°C/350°F.
Beat butter and sugar together for a few minutes, until light and fluffy.
Add the eggs and beat until you have a smooth texture.
In another bowl mix cinnamon, bakingpowder and flour.
Add the flour mixture and mix, you will get a thick dough.
Stir in the apple chunks.
On a baking sheet, lined with parchment paper, spread out the dough, with a spatula.
Bake for 30-35 minutes.
Let cool completely before cutting them.
Store in an airtight container.
I think they`re best, dipped in coffee.....but, what`s not?
