That`s exactly what spring is supposed to taste like....
White chocolate, almonds and dried cranberries.
Well, of course not just this, there`s more:
1/4 cup butter
3/4 cup sugar
1 tsp vanilla
2 cups flour
1 1/2 tsp baking powder
2 ounces white chocolate chunks
1/2 cup dried cranberries
3/4 cup slivered almonds
Cream butter and sugar in your mixer. Add eggs and vanilla, beat until light and fluffy.
Add flour and baking powder, stir until you have a smooth batter.
Fold in chocolate, almonds and cranberries.
Put your dough in the fridge for about 45 minutes.
Preheat oven to 325°F/170°C.
On a floured surface, shape two loaves and put on a baking sheet, lined with parchment paper.
Bake for 30 minutes, until golden brown.
Take out of the oven and allow to cool a bit.
Then cut about 1 inch slices of your loaves to get the tipical biscotti shape.
Arrange on baking sheet.
Bake for another 15 minutes.
Let cool and store in an airtight container!
